"Growing up on a farm with tons of fresh veggies from the garden and eggs from our chickens was my first learning experience to living a healthful lifestyle. Every lifestyle is different from one person to the next, so I focus on the person, not their eating or exercise routines."Īny accomplishments you would like to share? Most importantly for me, is to make sure that everyone is comfortable with the food choices and physical activity periods that they choose to practice. There are so many creative ways to celebrate without food too! I appreciate participating in the celebrations, as well, but I know that not every day presents itself to overindulge in an empty calorie dessert. There is a balance to enjoy food from all categories, even desserts! It seems that our society uses food as a social feature, such as celebrating happy occasions, and those usually come with a sweet treat. The biggest message that I like to share with students, (and show by modeling), is to find a place for all foods. "As a mother and a registered dietitian, I do pay attention to positive behavior modeling. Thankfully, I have plenty of friends to share the extra homemade goodies with!" Cooking and baking is enjoyable and relaxing for me. I also seem to gravitate toward “Kitchen Therapy” and like to try new recipes. I sometimes drive in silence, which helps my mind relax and provides for a better start to my workday or evenings when I get home. With a two-hour daily commute to/from work, it can be stressful. "Along with healthful eating and regular physical activity, I try to incorporate quiet moments into my healthy lifestyle. Lately, I am learning about mountain biking (yay for a new, cute helmet!), so let’s hope I can get through the summer without any broken bones." "For me, physical activity has to be FUN! Anything that has to do with me being outside is automatically a win! We are lucky to live in state where there are very few days that going outside isn’t manageable, so I find all sorts of excuses to get outside. How do you fit physical activity into your lifestyle? It just makes for a much easier time to get a nutritious meal on the table during the week. It’s my normal Sunday routine to check out what ingredients I already have on hand, then plan what meals I can make with them, jot down a grocery list and finally start meal prepping in the afternoon. I really, really like to meal plan on Sundays. Weekday mornings can be a rush and I don’t want to forego a lunch that makes me feel good in the afternoon or yummy snacks that help me get through the workday, because I’m focused on my to-go coffee or what shoes I’ll wear that day! So when it comes to my flours, breads and pastas, I usually try to stick to either gluten free or low gluten options, like spelt.ĭid I mention that breakfast is my favourite meal of the day? Well it is and if I could eat it for all of the meals of the day, I totally would. I’m not gluten intolerant, but I do find that I feel better when I eat less gluten. Who said healthy eating has to be boring? Pancakes can be a healthy breakfast when you use the right ingredients. For real though, I have to say that to date these are my favourite, fluffiest pancakes that I’ve ever made and trust me no one can even tell that they’re healthy! In my opinion, this is the closest thing to delicious diner fluffy pancakes minus all that dairy, sugar and white flour that usually comes with it. GOOD MORNING everyone! Or at least it should be a good morning just because of these gluten free fluffy pancakes that are literally going to blow the slippers off your feet. Sundays mornings just got better with these healthy, fluffy and gluten-free pancakes drizzled with Canadian maple syrup.
